The first thing to do when you get your new barbecue smoker is season it well. This rids the unit of paint residue and seals it against moisture that causes rust. Coat the interior of the smoker with cooking oil. Canola, vegetable and peanut oils work equally well. Fire it up and bring the temperature to about 300 degrees Fahrenheit and keep it there for about an hour. Do not cook food on the smoker during this process. Allow it to cool and your new smoker is ready to use.
